These fluffy chocolate coconut protein pancakes are moist, delicious, and topped with white chocolate coconut butter, peanut butter, coconut flakes, and chocolate chips.

Ingredients
Chocolate Coconut Pancakes
½ cup oat flour (or other flour of choice)
1 scoop (30g) chocolate casein protein powder
1 tbsp. unsweetened cocoa powder
1 tbsp. granulated stevia/preferred sweetener
½ tsp. baking powder
½ cup milk (any milk is fine)
¼ cup (85g) canned pumpkin puree*
¼ cup yogurt (or more pumpkin, applesauce, etc.)
1 whole egg
⅛ tsp. coconut extract
Toppings
1 tbsp. Sweet Spreads white chocolate coconut butter
2 tbsp. Might Nut peanut flour (mixed with water)

chocolate chips
Instructions
Preheat pan or griddle to medium/high heat. Mix flour, protein powder, cocoa powder, stevia, and baking powder. In a separate bowl, mix milk, pumpkin, yogurt, egg, and coconut extract.
Combine wet and dry ingredients. Spoon batter onto griddle to make 4 even sized pancakes. Cook for about 3 minutes per side.
Top pancakes with coconut butter, peanut butter, coconut flakes, and chocolate chips. Enjoy!

Notes * Pumpkin can be substituted for an equal amount of applesauce, mashed banana, or more yogurt.
