Blueberry Coconut Chia Pudding

This blueberry coconut chia pudding is way healthier than any pudding you can buy in the store, and in my opinion tastes better too! It is full of protein, fiber, and healthy fat from the chia seeds.

Ingredients
  • 1¾ cups coconut milk (or almond milk)
  • ¾ cup frozen blueberries (fresh would be fine too)
  • ¼ cup almond butter (or peanut butter)
  • ½ tsp. coconut extract*
  • 20 drops vanilla liquid stevia**
  • ½ cup chia seeds
Instructions
  1. Add milk, blueberries, almond butter, coconut extract, and stevia/sweetener to a blender. Blend until smooth and blueberries are well blended.
  2. Add chia seeds and pulse a few times until they are well incorporated.
  3. Transfer mixture to a sealable container or cover with plastic wrap. Refrigerate overnight to let the chia seeds soak up liquid and thicken into pudding.
  4. Divide pudding into either 2 large or 4 medium servings. Top with coconut, blueberries, and granola if desired. Enjoy!
Notes
* You can use ¼ tsp. coconut extract if you don't want quite as strong of a coconut flavor.
** 3 tbsp. of granulated stevia or preferred sweetener can be used if you don't have the liquid stevia.
