Healthy Protein Brookies (Brownie + Cookies)

These protein brookies are the perfect combinations between a chewy chocolate chip cookie and a decadent brownies. They are also made with all healthy ingredients!

Ingredients
Cookie Layer
  • 1½ cups oat flour
  • ½ cup brown rice flour (or more oat flour)
  • ¼ tsp. salt
  • ½ tsp. baking powder
  • 2 tbsp. maple syrup
  • 2 tbsp. almond butter
  • 2 tbsp. coconut oil
  • 2 tbsp. brown sugar
  • 1 tsp. vanilla extract
  • ⅓-1/2 cup chocolate chips
Brownie Layer
  • ¾ cup oat flour
  • ¼ cup cocoa powder
  • 1 scoop (35g) True Nutrition chocolate brownie rice protein powder
  • ¼ tsp. salt
  • ½ cup milk (I used almond)
  • 3 tbsp. coconut oil
  • ¼ cup agave syrup (or maple syrup)
  • 2 tbsp. natural peanut butter
  • 3 tbsp. chocolate chips, melted
Instructions
  1. Preheat oven to 350F. Mix all cookie dry ingredients in a bowl. In a separate bowl, melt coconut oil and add the rest of the cookie wet ingredients. Combine wet and dry cookie layer ingredients. Batter will be thick and crumbly.
  2. Spray a 6x9 baking pan with nonstick spray. Press cookie layer into the bottom of the pan.
  3. Now, mix all brownie layer dry ingredients in a large bowl. In a separate bowl, melt coconut oil and chocolate chips. Add remaining wet ingredients to melted coconut oil and chocolate chips. Mix until smooth.
  4. Combine wet and dry brownie ingredients. Spread brownie layer over top of cookie layer. Bake for about 20 minutes or until a knife comes out clean.
  5. Cut into 12 bars and enjoy!
