Chocolate Fudge Mini Protein Muffins

These mini chocolate protein muffins are dense and sweet with a decadent fudge texture. They are so simple and easy to make that it would be a mistake not to.

Ingredients
  • 2 scoops chocolate pea protein*
  • ½ cup oat flour
  • 1 cup semi-sweet chocolate chips + more for topping
  • 1 tbsp. coconut oil
  • 2 eggs
  • 3 tbsp. maple syrup
  • ⅛ tsp. salt
Instructions
  1. Add protein powder, oat flour, and salt to a large bowl. In a separate bowl, microwave coconut oil and semi-sweet chocolate chips.
  2. Let chocolate cool a little bit, then add eggs and maple syrup. Whisk together until smooth.
  3. Combine wet and dry ingredients. Mix together with a fork until a thick batter forms.
  4. Spoon batter into 24 mini muffin moulds. Bake for 10 minutes or until a knife comes out clean.
  5. Let cool, then melt more chocolate and drizzle over top of the muffins. Enjoy!
Notes
Casein protein can be substituted for pea protein. Or, more flour if you don't want any protein at all.
