Healthy Chocolate Peanut Butter Fudge Truffles

These healthy chocolate peanut butter fudge truffles have an amazing fudge-like texture combined with the perfect combination of chocolate and peanut butter flavor.

Ingredients
  • ¾ cup chocolate peanut butter (I used this one)
  • 5 tbsp. coconut oil
  • ¼ cup pure maple syrup*
  • 1 cup peanut flour
  • ¼ cup unsweetened cocoa powder
Instructions
  1. In a large microwave safe bowl, add coconut oil and chocolate peanut butter. Microwave for about 45 seconds until peanut butter and coconut oil are melted. Mix until smooth.
  2. Add peanut flour and cocoa powder. Mix again until smooth. Finally, add maple syrup and stir in until combined.
  3. Place dough in fridge for about 10 minutes to set up a little. Once chilled, roll into about 25 small truffles.
  4. Now, you can get creative. I rolled some of the truffles in cocoa powder, some of them in peanut flour, and some of them in sprinkles. I decided to go with both chocolate and christmas sprinkles for fun. Enjoy!
Notes
*You could sub honey or agave for the maple syrup. I am not sure if sugar free maple syrup would work or not.
