Chocolate Peanut Butter Protein Mousse

This healthy protein mousse is super light and creamy and the perfect chocolate peanut butter treat when you get that craving for something sweet!

Ingredients
  • 2 ripe avocados, pitted and flesh scooped out.
  • 2 scoops Ascent chocolate micellar casein protein powder
  • ¼ cup unsweetened cocoa powder
  • ¾ cup dark chocolate chips (amount before melting)
  • ½ cup natural creamy peanut butter
  • 1 cup milk (I used unsweetened cashew)
  • ⅓ cup vanilla Greek yogurt*
Instructions
  1. Heat chocolate chips in the microwave until melted. Heat peanut butter in microwave until runny (about 30 seconds).
  2. Add avocado, melted chocolate chips, peanut butter, milk, and Greek yogurt to a powerful food processor. Blend until smooth. There should be no chunks of avocado left.
  3. Add protein powder and cocoa powder. Blend again until a thick, smooth mousse forms.
  4. If desired, top with whipped cream and dark chocolate shavings before serving. Enjoy!
Notes
*Optional, but makes the mousse a little creamier and adds a bit of protein. If omitting, add a few tbsp. extra milk.
