Peanut Butter Coconut Energy Balls

These peanut butter coconut energy balls are the perfect healthy snack for when you are on-the-go and want to stay topped up with energy!

Ingredients
  • 1 cup (80g) old fashioned oats
  • ½ cup peanut flour*
  • ¾ cup shredded coconut, unsweetened (plus more for coating)
  • ¼ cup whole flaxseed
  • 2 tbsp. chia seed
  • 6 tbsp. pure maple syrup**
  • ¼ cup almond milk
  • ½ tsp. vanilla extract (optional)
Instructions
  1. Add oats, peanut flour, shredded coconut, flax seed, and chia seed to a food processor. Blend until oats are ground up.
  2. Add maple syrup and almond milk. Blend again until all ingredients are well combined.
  3. Roll dough into 1-inch balls. It should make about 18 of them.
  4. Fill a small bowl with shredded coconut. Roll each of the balls in coconut to coat the outside.
  5. Enjoy!
Notes
*Read paragraph above about substituting protein powder, almond flour, or coconut flour instead of peanut flour.
**Honey or agave would most likely work as well, but I have never tried it.
