Lemon Coconut Protein Bars (No-Bake)

Take a break from your processed, expensive packaged protein bars and try these super easy and delicious lemon coconut no-bake protein bars!

Ingredients
  • 1 cup quick oats
  • 1 cup sweetened shredded coconut*
  • 3 scoops Ascent lemon sorbet whey protein powder
  • 1 cup almonds (raw or roasted, unsalted)
  • ⅓ cup creamy almond butter (cashew butter or peanut butter work as well)
  • 6 tbsp. almond milk (or preferred milk)
  • 6 tbsp. pure maple syrup (or honey/agave)
  • 1 tsp. lemon juice (optional for stronger lemon flavor)
  • zest of ¼ lemon (optional for stronger lemon flavor)
  • ⅛ tsp. salt
Instructions
  1. Add oats, coconut, protein powder, and almonds to a food processor. Pulse until well combined.
  2. Now add almond butter, milk, maple syrup, lemon juice/zest, and salt. Process again until everything is well combined. Should start to form a somewhat moist, but crumbly mixture.
  3. Line an 8x8 baking dish with foil. Add mixture into the baking dish. Press down with spoon to compress and spread evenly. Chill in the fridge for a few hours, slice into bars and enjoy!
Notes
*Can use unsweetened coconut as well for less calories/sugar. However the sweetened adds a nice subtle sweetness to the bars that pairs well with the lemon flavor. Alternatively, use unsweetened coconut, use a few tbsp. less milk, and a few more tbsp. maple syrup for a similar flavor profile without the sweetened coconut.
