Serves: 20 cookies
Ingredients
  • 1 scoop Ascent native fuel vanilla whey protein powder
  • 1 scoop Ascent native fuel vanilla casein protein powder
  • 2 tbsp. coconut flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • ½ cup natural peanut butter
  • 2 whole eggs
  • ¼ cup coconut oil (or butter), melted
  • ¼ cup Truvia baking blend
  • 2 tbsp. mini chocolate chips
  • 20 peppermint Hershey kiss candies
Instructions
  1. Preheat oven to 350F. Add all ingredients except for chocolate chips and peppermint Hershey’s to a food processor. Process until a thick batter forms and all ingredients are well incorporated. Add chocolate chips. Pulse until they are distributed evenly throughout the batter.
  2. Add the batter to a mini muffin pan filling 20 spots. Alternatively, roll into 20 balls to make cookies. Bake for a few minutes, take out of the oven, press a peppermint Hershey kiss on top of each and finish baking for a few more minutes. About 5-6 minutes total. If you bake too long, they will dry out easily.
  3. Once done baking, let cool and enjoy!
Notes
*Truvia baking blend is a stevia/sugar mixture. If you can’t find it, you can alternatively use ½ cup granulated sugar.
**You can also make these into cookies, but will probably need to bake a little less time.
