Chocolate Peanut Butter Protein Rice Krispy Treats

A healthier, protein-packed chocolate peanut butter twist on the classic rice krispy treat. These certainly hit the spot if you love rice krispy treats but want some protein as well!

Ingredients
Protein Rice Krispy Treats
5½ cups (145g) Rice Krispie’s cereal
3 cups mini marshmallows
2 tbsp. coconut oil
½ cup natural creamy peanut butter
2 scoops Ascent chocolate peanut butter casein protein
1 cup milk (I used unsweetened almond, but any milk is fine)
pinch of salt
Chocolate Peanut Butter Drizzle (optional)
2 tbsp. dark chocolate
2 tbsp. natural creamy peanut butter
½ tbsp. coconut oil (may not need it depending how oily peanut butter is)
Instructions
Add mini marshmallows and coconut oil to a large pot. Melt marshmallows slowly over low heat. High heat will burn the marshmallows! Once melted, add peanut butter.
Mix chocolate peanut butter casein protein with milk in a separate bowl.
Add rice krispies cereal to melted marshmallow/peanut butter mixture. Add protein/milk mixture as well. Mix everything together until completely combined.
Press into a 9x5 pan or baking dish (I used a loaf pan). Place in the freezer to set for about 20-30 minutes.
Melt all chocolate peanut butter drizzle ingredients in a small bowl in the microwave. Microwave for 30 second intervals, stirring after each interval, until melted. Drizzle chocolate peanut butter mixture over top. Chill again for a few minutes.
