The best part about the weekend for me is sleeping in, taking the time to enjoy my breakfast and coffee, and getting a great workout in. This BLUEBERRY MUFFIN FRENCH TOAST is the perfect way to start the weekend, get some good protein and nutrients, and tastes absolutely amazing!
Blueberry Muffin … meet Protein French Toast
There is a reason that I am calling this Blueberry Muffin Protein French Toast rather than just blueberry protein french toast. That is because it legitimately tastes like a blueberry muffin. And, I even added a little bit of on oatmeal crumble that you find on good blueberry muffins.
Where does the blueberry muffin flavor come from?
For this one, I used some amazing Blueberry Muffin flavored whey protein powder from my friends over at Bare Performance Nutrition (BPN). They have a huge line of flavors, and honestly the best tasting protein I have ever had. I have no idea how they made this protein powder taste exactly like a blueberry muffin, but they did it.
What other flavors do I like?
Like I mentioned above, they have a bunch of flavors. My personal favorite at the moment is a tie between the Fudge Chocolate and the Milk & Cookies. Sometimes I do half of each, and it’s insanely good!
Back to the blueberry muffin protein french toast
There are a few different tips and tricks I have to getting super moist, fluffy French toast!
- Let it soak in the egg wash for a long time. The bread should almost be falling apart when you put it in the pan. That is how saturated with egg wash it should be.
- Somewhat stale/dry bread. I actually left my bread out of the package overnight to let it dry out a bit. This allows it to absorb much more of the egg!
- Medium heat. You don’t want the heat super high because that will just cook the outsides, and leave the center of the bread undercooked without fluffing up. With medium heat, the outsides don’t burn and the inside cooks and gets nice a fluffy!
For the Blueberry Sauce
It is actually quite easy to make. All you need is:
- 1/4 cup blueberries
- 1/4 cup sugar free maple syrup (or regular)
- 1 tbsp. chia seeds
Heat the berries and syrup together in the microwave, then add the chia seeds and let thicken for 5-10 minutes. Once thickened, drizzle over the french toast!
For the Oatmeal Crumble
This is what really gives them that blueberry muffin feel. It’s a combination of light butter, oats, and 1/2 scoop Blueberry Muffin protein powder. Mix together, and bake in the oven until crisp. Once all the parts are done, assemble!
It makes two servings so divide the french toast between two plates, top with the blueberry jam, and sprinkle with the oatmeal crumble. Then, devour and enjoy the happiness that a delicious stack of blueberry muffin protein french toast and a cup of coffee will bring to your weekend!

Description
Fluffy, blueberry muffin protein french toast is the best french toast you will have! Topped with a blueberry jam and oatmeal crumble, it tastes too good to be this low calorie!
Ingredients
French Toast
4 slices low-carb bread*
1 scoop BPN Blueberry Muffin whey protein powder
2 whole eggs
2 egg whites
1/3 cup unsweetened almond milk
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
pinch salt
Blueberry Jam
1/4 cup fresh blueberries
1/4 cup sugar free maple syrup
1 tbsp. chia seeds
Oatmeal Crumble (optional)
1/4 cup quick oats
2 tbsp. light butter
1/2 scoop BPN Blueberry Muffin whey protein powder
Instructions
- Preheat a large pan to medium heat.
- Whisk together protein powder, whole eggs, egg whites, almond milk, vanilla extract, cinnamon and salt. Cut each of the 4 slices of bread on half, diagonally to make 8 triangles. Soak each in the egg mixture for about 1 minute per side.
- Spray pan with nonstick spray. Cook french toast for about 3 minutes per side, or until golden brown.
- For the jam, add blueberries and syrup to a small microwave safe bowl. Microwave for about 30 seconds. Mash the blueberries together with syrup. Add chia seeds and stir. Place in the fridge for 10-15 minutes to thicken.
- Finally, for the oatmeal crumble, add oats, light butter, and protein powder to a bowl. Mix. Should be a crumbly mixture. Place on a baking sheet and bake at 350F for about 10 minutes.
- Top french toast with blueberry jam and oatmeal crumble. Enjoy!
Notes
*Any bread will work, but I like to use a lower carb bread. Also, if you can plan ahead and set the bread out overnight before making, it will get a little dry and soak up the egg mixture much better and make a fluffier, more moist french toast.
