Chocolate Cherry Protein French Toast

So, it happened again. I made some French toast and remembered how much I absolutely love a nice stack of fluffy cinnamon French toast. I have been dreaming about it ever since I made it. Actually, there is tons of food I dream about. I’m pretty much always thinking about food haha! But, this amazing chocolate covered cherry protein French toast is the most recent delicacy.

One of the things I love about French toast is really how simple it is to make. It is just the normal egg wash consisting off egg, egg white, protein powder, sweetener, cinnamon and milk. Cook it up on a griddle and top with whatever you are craving.

  Chocolate Cherry Protein Frech Toast
When I made this, I was craving chocolate (of course) and cherries. The French toast is my typical cinnamon protein French toast recipe topped with a sweet cherry compote and a healthy serving of melted chocolate. I was about to say that chocolate and cherries go so well together, but chocolate and anything pretty much go well together!
Chocolate Cherry Protein French Toast

Serves: 1 serving
Fluffy cinnamon protein French toast drizzled with decadent dark chocolate and topped with a sweet but healthy cherry compote.
Ingredients
  • 3 slices whole wheat bread (or bread of choice)
  • 1/2 scoop (17g) protein powder
  • 1 tbsp. granulated stevia (or sweetener of choice)
  • 1/2 tsp. cinnamon
  • 1 whole egg
  • 1 egg white
  • 1/4 cup milk (any milk is fine)
  • 1/3 cup frozen cherries
  • 2 tbsp. sugar free maple syrup
  • 1 tbsp. (15g) dark chocolate chips
Instructions
  1. Preheat pan or griddle to medium/high heat. In a bowl, whisk together egg, egg white, milk, cinnamon, stevia and protein powder. Spray heated griddle with cooking spray. Soak each slice of bread in egg mixture and cook for about 3-4 minutes per side or until golden brown.
  2. Heat a separate small pan to medium heat. Spray with cooking spray. Add cherries and maple syrup. simmer for about 5 or 6 minutes until cherries start to break down a little and make a sauce.
  3. Melt dark chocolate chips in the microwave. Drizzle French toast with dark chocolate and top with cherry compote. Enjoy
