Pecan Pie Fudge

I made this pecan pie fudge about a week and a half ago before heading out of town for a road trip. I was really craving something with a fudge texture, so what better to make than some healthy fudge?

I really didn’t know what to call it at first. I just made it with some ingredients I had on hand. Once it was done, I realized how much it tasted like pecan fudge. And, my mom who loves pecan pie even thought so. It probably can’t say enough how delicious it is!

It was also surprisingly easy to make. If you want, when all the ingredients are in the pan heating, you can add a scoop of protein powder. I went ahead and just made it without the protein, but I’m sure it would still be amazing. And, it would have a nice boost of protein!

This pecan pie protein fudge is not only healthy but also has an amazing fudge texture and pecan pie taste to go along with it.
Ingredients
  • 1/2 cup pure maple syrup (not sugar free)*
  • 1/4 cup (56g) coconut oil
  • 1/3 cup (85g) nut butter (I used peanut butter)
  • [url href=”http://bit.ly/1qX9BcA” target=”_blank”]1 scoop Beast Sports vanilla protein powder (optional)[/url]
  • Pecans for topping
Instructions
  1. Spray 7 silicone muffin molds with nonstick spray. If you don’t have silicone muffin molds, you can just spray a muffin pan with nonstick spray but it will be a little harder to get the fudge out once set.
  2. Add maple syrup, coconut oil, and nut butter to a saucepan. Bring to a boil while stirring constantly. Let boil for 2 minutes while continuing to stir.
  3. Pour mixture into the prepared muffin molds. Top each with a pecan. Put in freezer for 2 hours to set. Let fudge thaw out a little before eating and enjoy! Also, make sure to store the fudge in the fridge.
