It has been a while since I have mad a recipe. I left for Arizona Thursday morning last week and got back Monday morning and I just got around to making another recipe last night. It has been too long! I figured why not go for something simple and delicious like chocolate chip protein muffins?
I decided to go for mini muffins on this recipe. There is just something I like about making a bunch of mini muffins and then being able to ea three or four muffins instead of one. I know it is still the same amount of food. It’s just a mental thing I guess! After I made them last night, I had a bowl of Greek yogurt and added 4 muffins to it. :)
The cool part about these muffins are that I used beans for the base. Before you say gross, let me tell you that beans are awesome to cook with. If you have not tried it, I highly recommend it. There is actually only 3 tbsp. of flour in this recipe and I am sure you could get away with no flour at all by just using oats instead of the flour. Another great part about using beans is that they are packed with protein and fiber.
Of course just beans wouldn’t taste very good so I added some Musclepharm vanilla combat powder to boost the flavor and the protein. I’m sure their cinnamon bun, snickerdoodle, or cookies and cream combat powders would have been awesome in this too!
If you would rather make regular size muffins, this recipe will make about 12 normal sized muffins. Or you could even make 6-8 jumbo muffins. The cooking time will be longer. They will probably need around 15 minutes if you make regular muffins. Make sure to poke them with a toothpick or knife, and when it comes out clean, they are done.

Description
Mini chocolate chip protein muffins that are healthy and filled with lots of delicious dark chocolate chips. You will never guess that the secret ingredient is beans.
Ingredients
- 1 can (240g drained) white beans, rinsed*
- 1 1/3 scoops (45g) Musclepharm vanilla combat protein powder
- 3 tbsp. (25g) whole wheat flour
- 1/4 cup granulated stevia/erythritol*
- 2 tbsp. (24g) coconut palm sugar (brown sugar, white sugar)*
- 1 whole egg
- 1/2 cup (113g) plain nonfat Greek yogurt
- 1 tbsp. (14g) melted coconut oil or olive oil
- 1/2 tsp. vanilla extract
- 1/4 tsp. baking powder
- 3 tbsp. dark chocolate chips, divided
Instructions
- Preheat oven to 350F. Drain beans and rinse well. Pat with a paper towel to dry. Add beans, egg, Greek yogurt, melted coconut oil, and vanilla extract to food processor. Process until smooth.
- Add protein powder, whole wheat flour, stevia, coconut sugar, and baking powder. Process until smooth. Scrape down sides of food processor to and pulse a few times until smooth again.
- Put 2 tbsp. of the dark chocolate chips into the food processor and pulse a couple of times to incorporate the chocolate chips into the batter.
- Spoon batter into 24 spots in a prepared mini muffin tin. You can also make 12 regular sized muffins. Set a chocolate chip on top of each of the muffins and slightly press into batter.
- Bake for 8 minutes if making 24 mini muffins. Cook for a few minutes longer or until a knife comes out clean if making regular sized muffins.
Notes
*Make sure to rinse the beans really well. If you use garbanzo beans, it will have a slightly gritty texture due to the shell on the garbanzo beans.
* Use more or less stevia and coconut palm sugar if you like them a bit sweeter.
