I have really been enjoying doing recipe videos now. I have been enjoying it so much that I decided to take the Lemon Raspberry Protein Muffins from a while ago and make that recipe into a video.

Description
This recipe is for some delicious Lemon Raspberry Protein muffins made with lemon protein powder and filled with delicious raspberries and topped with a lemon glaze!
Ingredients
Muffins
- 1 1/4 cups flour
- 2 scoops Ascent Lemon sorbet whey protein powder
- 1/3 cup Truvia sweetener
- 2 whole eggs
- 1/4 cup milk (I used unsweetened almond)
- 1/3 cup coconut oil (melted)
- 1 cup nonfat Greek yogurt
- juice of 1/2 lemon (about 3 tbsp.)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 cups fresh raspberries
Lemon Glaze
- 1/4 cup Swerve confectioners sugar replacement**
- 2 tbsp. lemon juice
Instructions
- Preheat oven to 350F. Mix all dry ingredients together in a large bowl. In a separate bowl, whisk together eggs, milk, melted coconut oil, Greek yogurt and lemon juice.
- Combine wet and dry ingredients. Gently mix together until a smooth batter forms. Add raspberries and fold in gently.
- Scoop batter into a 12-spot prepared muffin tin sprayed with nonstick spray.
- Bake at 350F for 12-14 minutes or until a knife comes out clean. It is probably better to bake for closer to 12 minutes and pull them out of the oven a little under-done so that they do not dry out.
- Once out of the oven, mix lemon glaze ingredients in a small bowl. Drizzle muffins with lemon glaze and enjoy!
Notes
*Truvia is a stevia/white sugar blend that has half the calories and sugar of regular, granulated white sugar. It can be found in the baking aisle of most groceries. If you can’t find it, you can use 1/2 cup regular white sugar.
**Swereve is a sugar free natural sweetener. It is just like powdered sugar, but without the sugar and calories. It can also be found in the baking aisle of most grocery stores, but if you can’t find it, you can just use regular confectioners sugar.
