Coconut Chocolate Chip Protein Bars (No Bake)

I don’t really ever make no-bake recipes, but I decided to this time. I had a 9 hour drive down to Georgia on Thursday so I made these coconut chocolate chip protein bars as a snack to eat on the road.

I can honestly say, I think they are one of the best recipes I have ever made. And trust me, I am not just saying that. They seriously tasted like a mixture between cookie dough and a really good soft protein bar. Absolutely amazing!

As you can probably tell from all of the recipes I make, I am pretty much obsessed with anything chocolate. And pretty much anything coconut. So, these were like the ultimate flavor combo.

Oh, and I forgot to mention that they also have peanut butter. Between the chocolate, coconut, and peanut butter, my taste buds were very happy with these!
Coconut Chocolate Chip Protein Bars (No Bake)

Serves: 8 bars
Moist and dense coconut chocolate chip no bake oatmeal protein bars that are soft and full of amazing nutrients and flavor.
Ingredients
  • Bars
  • 3 cups (180g) old fashioned oats
  • [url href=”http://bit.ly/1qX9BcA” target=”_blank”]1 scoop (34g) Beast Sports vanilla protein[/url]
  • 1 scoop (30g) vanilla casein protein
  • 1/4 cup (30g) unsweetened shredded coconut
  • 1/2 tsp. cinnamon
  • 1/4 cup pure maple syrup
  • 1/4 cup (56g) coconut oil
  • 6 tbsp. (96g) natural creamy peanut butter
  • 3/4 cup milk (any milk is fine)
  • 1/4 cup (60g) carob chips (or dark chocolate chips)
  • 1 tsp. vanilla extract
  • 1 tsp. coconut extract
  • Topping
  • shredded coconut
  • melted chocolate chips
Instructions
  1. Mix oats, coconut, protein powder, and cinnamon in a large bowl.
  2. Add peanut butter, coconut oil, maple syrup, and milk into a pan. Heat on medium heat while continually stirring.
  3. Combine wet and dry ingredients. Mix together until well incorporated and a sticky mixture is formed. Press mixture into a 6×8 baking dish lined with foil.
  4. Put in fridge to set for about 5-6 hours or overnight.
  5. Drizzle melted chocolate over top and sprinkle with extra shredded coconut.
  6. Cut into 8 bars and enjoy!
