It is no secret how much I love pancakes. So, here we have a delicious stack of Banana Maple Muffin Protein Pancakes. Yes, they do actually taste like a banana muffin. And, can you ever go wrong with maple flavor and pancakes? I don’t think so.
Banana Maple Muffin Protein Pancakes = Amazing flavor combo.
How do they taste like a banana muffin? Well I am glad you asked. I used a tasty Banana Maple Muffin flavored protein powder from TRU Supplements. They are a new company that I have been doing some cool recipes with which will be coming out over the next few weeks and months.
One of the cool things is that their protein powder is a plant-based protein, so it is great for dairy free and vegan options. This recipe can be made vegan super easy. Just swap the egg whites for a chia/flax egg and you have a delicious, protein packed stack of vegan pancakes.
PANCAKE TOPPINGS
As you would expect with pretty any recipe I ever post, I had to add some peanut butter. Don’t worry, it goes along with the flavors of this recipe because it is a maple peanut butter sauce with the following
- PB Fit (powdered peanut butter), which has way less fat and way more protein than regular peanut butter
- Sugar free ChocZero maple syrup (no sugar, vegan, keto, and has added fiber!)

Banana Maple Muffin Protein Pancakes

Description
Fluffy, banana maple muffin protein pancakes topped with a drizzle of maple peanut butter sauce, sliced banana, and chopped nuts.
Ingredients
Pancakes
⅓ cup (40g) oat flour
1 scoop TRU Banana Maple Muffin protein powder
2 egg whites*
¼ cup + 2 tbsp. Unsweetened vanilla almond milk
¾ tsp. Baking powder
¼ tsp cinnamon
Pinch of salt
Sweetener to taste
Toppings
1-2 tbsp. Peanut butter
¼ sliced banana
1 tbsp. Chopped nuts
Instructions
Preheat pan to medium/high heat. Add all pancake ingredients to a bowl. Gently stir together until a smooth batter forms.
Spray pan with nonstick spray. Spoon batter onto pan to make 4 medium-sized pancakes. Cook for about 3 minutes per side.
Top with chopped banana, a drizzle of peanut butter and some chopped nuts. Enjoy!

*To make the recipe vegan, substitute a flax/chia egg instead of the egg whites.
