Ahh, you really can’t beat a good ol’ stack of fluffy protein pancakes. My relationship with pancakes goes way back to my first days of macro tracking and cooking with protein. To this day, they are still a staple meal. You can’t beat how quick, easy, and delicious these Berry Peanut Butter Protein Pancakes are. Anyway, let’s move on to the good stuff
Berry Peanut Butter Protein Pancakes
Berries and peanut butter are two things I almost always have on hand. Berries go into my daily smoothies, and what kid of person would I be if I didn’t always have a few jars of peanut butter ready to go?
Pancake Batter + Berries
I used frozen berries for this. I like having frozen berries because they are fresh frozen, so they taste fresh but you don’t ever have to worry about them going bad.
Preheated pan –> medium / high heat
This recipe makes 2 servings, each with 3 medium/large sized pancakes. If you have a large griddle, you can probably cook all 6 at once. I just did 2 batches of 3 pancakes each.
Cook for 3-4 minutes per side
The pancakes will start to get fluffy and bubble, that is how you know when they are ready to flip. It should be about 3-4 minutes per side.
Toppings
Finally, once the pancakes are done cooking, it is time to add the toppings. I added some vanilla Greek yogurt, mixed berry sauce (just frozen berries heated in the microwave), and a drizzle of creamy peanut butter.
Notes
Protein Powder
For the protein powder, I used a Berries & Cream flavored whey protein from my friends over at MTN Ops. If you don’t have this protein, or a berry flavored protein such as this strawberry protein or this blueberry muffin protein, you can of course use a standard vanilla whey protein.
Peanut Butter
In the recipe, you will notice that I used peanut flour inside the pancakes. This helps to add a delicious peanut butter flavor but without all the excess fat and calories you would normally get from regular peanut butter. You can use regular peanut butter if you have plenty of calories to play around with.
Then, for the topping, I went with some real peanut butter. I used the Smooth Nuts creamy peanut butter from Fokken Nuts. It is amazing, and lower in fat and calories than your standard Jif peanut butter or something similar. Fokken Nuts also has a ton of other delicious flavors like cookie dough, white chocolate, chocolate brownie, and cookies & cream.

Ingredients
Pancakes
½ cup + 2 tbsp. (75g) whole wheat flour*
2 scoops (62g) MTN Ops Magnum Berries & Cream whey protein
3 tbsp. (24g) peanut flour
1 tsp. Baking powder
¼ tsp. Salt
2 whole eggs
½ cup (113g) plain, nonfat Greek yogurt (or applesauce, mashed banana, canned pumpkin)
1 cup unsweetened almond milk
1 tsp. Vanilla extract
1 cup mixed berries (fresh or frozen is fine)
Toppings
¼ cup vanilla Greek yogurt
Melted mixed berries
1–2 tbsp. Peanut butter
Instructions
- Preheat the pan or griddle to medium/high heat.
- Add flour, peanut flour, protein powder, baking powder and salt to a large bowl. Mix. In a separate bowl add eggs, nonfat Greek yogurt, almond milk, and vanilla extract. Whisk.
- Combine wet and dry ingredients. Gently stir together until a smooth pancake batter forms. Add berries and fold into batter.
- Cook 3 pancakes at a time on a large pan, or more if you can fit them. Cook for about 3-4 minutes per side.
- Once cooked, top with Greek yogurt, more berries, and peanut butter. Enjoy!
Notes
*Regular all-purpose flour or oat flour can be substituted for the whole wheat flour.
**Peanut flour is just defatted peanuts. It can be found near the peanut butter at most groceries. If you can’t find it, you can add regular peanut butter but calories and fat will be higher.
