I am all about pancakes. They are probably my most favorite thing to make. There are just so many delicious combinations and flavors you can make. This time I decided to go with chocolate covered strawberry. I really like the combination of chocolate and strawberry. I guess I pretty much like chocolate with anything though!
I made these pancakes after I had just gone on a bike ride so I wanted something that was quick, easy, and delicious. I am so glad that Kodiak Cakes sent me some of their different protein pancake mixes to try. I used the power cakes whole grain buttermilkĀ mix for this recipe. They were the perfect thing to make a quick batch of protein pancakes to after my ride.
All I did was add some cocoa powder and stevia to the pancake mix and I had my chocolate pancakes. Then I layered them with some simply chobani strawberry Greek yogurt. I love the simply chobani because it i naturally sweetened and only has about 6 or 7 grams of sugar in a container. There normal Greek yogurts have upwards of 20 grams of sugar. Yikes!
I added two different chocolate toppings because I can never have enough chocolate. I made a sugar free dark chocolate sauce and drizzled it over. Then I topped them with Sweet Spreads, my favorite all natural coconut butter. I used their chocolate brownie flavor. It was perfect to complete this awesome stack. It was seriously chocolate covered strawberry pancake perfection.

Ingredients
Pancakes
- 1/2 cup (57g) Kodiak Cakes pancake and waffle mix
- 1 tbsp. (5g) unsweetened, dark cocoa powder
- 1 1/2 tbsp. granulated stevia or erythritol
- about 1/2 cup water (more or less depending on how thick you like your pancake batter)
Dark Chocolate Sauce
- 1 tbsp. (5g) unsweetened, dark cocoa powder
- 1 tbsp. granulated stevia or erythritol
- 2 tbsp. sugar free maple syrup
Extra Toppings
- 1 container (150g) strawberry Greek yogurt
- 1 tbsp. (16g) Sweet Spreads chocolate brownie coconut butter
- 1/3 cup sliced strawberries
Instructions
- Preheat pan or griddle to medium/high heat. Add kodiak cakes mix, cocoa powder, and stevia to a medium bowl. Add water and mix. Use more or less water depending on how thick you want your pancake batter to be.
- Spray griddle with nonstick spray. Spoon batter onto griddle to make Cook for about 2-3 minutes per side.
- Mix cocoa powder, stevia and sugar free maple syrup. Layer pancakes with strawberry Greek yogurt. Drizzle with chocolate sauce and chocolate brownie coconut butter. Enjoy!
