Everyone loves a god PB&J, and I know everyone loves pancakes. So I figured why not combine the two classics into a delicious stack of PB&J Protein Pancakes! It is everything you love about your favorite breakfast combined with your favorite snack. Makes these easy to eat for breakfast, a snack, or if you are like me, breakfast for dinner!!

PB&J Protein Pancakes
There are three main components to this delicious stack or peanut butter and jelly protein pancakes.
1: The Pancakes!
These pancakes are quite simple, low carb, and packed with protein. I used a vegan peanut butter cookie protein powder from BPN. Make sure to use my code “MACROCHEF” to save yourself 10%!!!
For these pancakes I would NOT recommend using whey. You could try casein, which absorbs liquid similar to vegan proteins, but whey will turn out dry and not nearly as amazing as these! In addition to the vegan protein, we have coconut flour and egg whites making up the bulk of the pancakes. As with the vegan protein, I do NOT recommend subbing another flour for coconut flour. I use this one from Amazon!
2: Peanut Butter Sauce
You can’t have PB&J pancakes without peanut butter! I love doing some sort of peanut butter sauce on my pancakes instead of syrup. Not only is it lower in sugar, but also packed with protein.
For the sauce I combined some peanut flour, PB cookie protein, a little bit of milk and some Stevia to taste. I love sweet things so I added about 1 tbsp. stevia, but you may not need any for your taste!
3: Strawberry Compote
Just like you can’t have PB&J pancakes without the PB, you also can’t have it without the jelly! For the jelly component I made a low sugar strawberry compote. It is just 3-ingredients: strawberries, chia seeds, and some sugar free maple syrup.
I heated up the strawberries with the maple syrup and mashed them together. Then, I added the chia seeds and let the compote chill in the fridge to thicken! You can do this part at the beginning before making the pancakes so it is ready to go when you are done cooking the pancakes.

Description
These PB&J Protein Pancakes are fluffy, low carb, and packed with protein. With the protein peanut butter sauce and low sugar strawberry compote they are sure to satisfy the tastebuds while still being macro friendly!
Ingredients
Pancakes
1 ½ scoops (45g) Peanut Butter Cookie vegan protein powder* (Use “MACROCHEF” to save 10%!)
2 tbsp. (14g) coconut flour
6 tbsp (96g) egg whites (or two egg whites)**
½ cup (120mL) unsweetened almond milk (or preferred milk)
½ tsp. Baking powder
Sweetener to taste
Pinch salt
PB Sauce
2 tbsp. (16g) peanut flour
2 tbsp. (12g) Peanut Butter Cookie vegan protein powder
¼ cup milk or water (enough to make it a smooth sauce consistency)
Sweetener to taste
Strawberry Compote
¼ cup strawberries
1 tbsp (5g) chia seeds
2 tbsp. Sugar free maple syrup
Instructions
- Preheat the pan or griddle to medium/high heat. Add all pancake ingredients to a bowl. Gently mix until a smooth batter forms.
- Spray pan with nonstick spray. Spoon batter onto the pan to make 4, medium-sized pancakes. Cook for about 3 minutes per side, or until golden brown.
- While pancakes are cooking, mix together strawberry compote so it can sit and thicken. The chia seeds will soak up moisture and make it thick like a jam.
- Mix peanut butter sauce ingredients in a separate bowl. Stack cooked pancakes and drizzle with strawberry compote and peanut butter sauce. Enjoy!
Notes
*Must use vegan protein, NOT whey. Vegan protein absorbs more water and the recipe will not turn out the same with a whey protein. You could try casein, but vegan protein works the best!
**To make these pancakes vegan, substitute the egg whites for a flax egg or chia egg!
