I don’t know if you guys know this, but I like pancakes. A lot. Well, I like them more than a lot. If I could eat pancakes for every meal, I probably would. I guess since they are healthy pancakes like these it wouldn’t be a problem to eat them for every meal. Hmmm.
This winter is really starting to get to me. I have had to ride my bike inside on the trainer for about the past 3 months. It gets old after a while. I need to get outside and have a change of scenery! So, in honor of summer and warm weather, I figured it was only right to make some white chocolate blueberry protein pancakes. Nothing reminds me of summer more than big juicy blueberries.
If you haven’t noticed already, I absolutely love cycling. I am going to Arizona in a few weeks for a race. I can’t wait to get to go and do a race in the warm weather. It will be so nice to be outside in the beautiful Arizona weather. It will be my first race of the year, so we will see how it goes. It is what keeps me going when I am stuck downstairs staring at the TV while riding.
These pancakes were actually one of my recovery meals after a ride. Filled with complex carbs from the whole wheat flour and packed with protein from the Musclepharm vanilla combat protein powder. And of course after a ride I always have a craving for something sweet and this perfectly satisfied my craving. The sweetness from the blueberries and the white chocolate sauce was just what I needed.
They really are pretty simple pancakes to make. Just my typical protein pancake recipe with fresh blueberries added. The white chocolate sauce was just sugar free white chocolate pudding mix mixed with water. And then to top it all off, I used some white chocolate coconut butter from Sweet Spreads. I use their coconut butter quite often in my recipes. It is all natural and all of their 6 flavors taste amazing.
White Chocolate Blueberry Protein Pancakes

Fluffy and delicious blueberry protein pancakes topped with sugar free white chocolate sauce, white chocolate coconut butter, and more fresh blueberries. A super healthy and easy breakfast.
Ingredients
Blueberry Pancakes
- 1/2 cup (60g) whole wheat flour (oat flour, all purpose flour, etc.)
- 1 scoop (34g) Musclepharm vanilla combat protein powder
- 1/2 cup (100g) cooked butternut squash*
- 1 large whole egg
- 1/4 cup unsweetened almond milk
- 1/4 tsp. vanilla extract (optional)
- 1/4 tsp. cinnamon (optional)
- 1/2 tsp. baking powder
- 1/3 cup (45g) fresh blueberries
White Chocolate Toppings
- 2 tbsp. (8g) sugar free white chocolate pudding mix
- 1 tbsp. (16g) Sweet Spreads white chocolate coconut butter
Instructions
- Preheat pa to medium/high heat or griddle to 350F. In a bowl, mix together flour, protein powder, cinnamon and baking powder. In a separate bowl, mix together butternut squash, egg, almond milk, and vanilla extract.
- Combine wet and dry ingredients and gently mix together until combined. Fold in blueberries.
- Spoon batter onto griddle to make 4 even sized pancakes. Cook for about 3-4 minutes per side or until golden brown.
- Mix white chocolate pudding mix with water to make a pudding sauce. It takes a good amount of water to make it a sauce consistency.
- Top pancakes with white chocolate sauce, white chocolate coconut butter and more fresh blueberries.
Notes
* I used canned butternut squash that is already cooked and mashed to a smooth consistency. You can also use canned pumpkin which will have pretty much the exact same texture. You can also use Greek yogurt, applesauce, or mashed banana.
