Chocolate Peanut Butter Protein Rice Krispy Treats

Who doesn’t love a good rice krispy treat? Sometimes I eat them when I am on the bike and they always hit the spot. However, they are pretty much just empty calories so I figured I’d make them a bit healthier with a boost of the new Ascent chocolate peanut butter casein protein. So, I came up with these chocolate peanut butter protein rice krispy treats.
 
Of course, with my love for chocolate and peanut butter these definitely hit the spot. I have never even made regular rice krispy treats so I wasn’t sure how these would turn out. Adding protein to recipes can always be a bit tricky because you never know how it will affect the texture and end result.

 
Surprisingly, it worked well for this recipe. Because casein absorbs so much liquid, you need to add a little extra liquid (the milk in the recipe) to make up for it. The mixture will also be super thick and sticky, so it’s tough to mix everything in. I actually just started using my hands. It was messy, but much easier to mix everything together.
 
After mixing, I pressed it into a pan and chilled in the fridge for a bit to let them set up before slicing. If you like rice krispy treats, then you will definitely love these with protein and chocolate peanut butter flavors added!
 
Chocolate Peanut Butter Protein Rice Krispy Treats

Serves: 12 bars
A healthier, protein-packed chocolate peanut butter twist on the classic rice krispy treat. These certainly hit the spot if you love rice krispy treats but want some protein as well!
Ingredients
  • [b]Protein Rice Krispy Treats[/b]
  • 5 1/2 cups (145g) Rice Krispie’s cereal
  • 3 cups mini marshmallows
  • 2 tbsp. coconut oil
  • 1/2 cup natural creamy peanut butter
  • 2 scoops Ascent chocolate peanut butter casein protein
  • 1 cup milk (I used unsweetened almond, but any milk is fine)
  • pinch of salt
  • [b]Chocolate Peanut Butter Drizzle (optional)[/b]
  • 2 tbsp. dark chocolate
  • 2 tbsp. natural creamy peanut butter
  • 1/2 tbsp. coconut oil (may not need it depending how oily peanut butter is)
Instructions
  1. Add mini marshmallows and coconut oil to a large pot. Melt marshmallows slowly over low heat. High heat will burn the marshmallows! Once melted, add peanut butter.
  2. Mix chocolate peanut butter casein protein with milk in a separate bowl.
  3. Add rice krispies cereal to melted marshmallow/peanut butter mixture. Add protein/milk mixture as well. Mix everything together until completely combined.
  4. Press into a 9×5 pan or baking dish (I used a loaf pan). Place in the freezer to set for about 20-30 minutes.
  5. Melt all chocolate peanut butter drizzle ingredients in a small bowl in the microwave. Microwave for 30 second intervals, stirring after each interval, until melted. Drizzle chocolate peanut butter mixture over top. Chill again for a few minutes.
  6. Cut into 12 rice krispy bars and enjoy!

    Do you know the macros without the peanut butter drizzle?

      Hey Alex,

      Sorry for the delayed reply. I have not calculated the macros without the chocolate peanut butter drizzle on top. The protein would stay about the same and the total calories, fat and carbs would be a bit lower.

    I followed the recipe and my Rice Krispie treats turned out soft and mushy. Were yours crunchy like a traditional Rice Krispie treat?

      Mine weren’t mushy, but they definitely aren’t exactly the same texture as a rice krispie treat you would buy from the grocery. Maybe your protein didn’t absorb as much liquid as mine and they got mushy? Did you use casein protein?
