Without a doubt these are some of the best blondies that I have made. They were dense, and moist, and super delicious. I still can’t really get over how cool those sprinkles look. They just make the bars pop. It’s like they are just calling you to eat them.
The sad part is that I do not think they will last very long. My dad loves them and will take some to work. It is funny that unless his coworkers know that Spencer the MacroChef made these, they have no idea that they are healthy. Goal accomplished. Make something healthy, taste too good to be healthy.
Thanks to MusclePharm for always supplying me with the protein for my recipes. I featured their vanilla combat powder in this recipe. It was perfect. It added some great flavor, and most importantly, high quality protein.
Another thing that I love to use in my recipes is Amber Lyn Chocolates. They are an all natural sugar free chocolate company. You all know how much I love chocolate so it is pretty awesome to have a chocolate that is good for you too. I used a mixture of their milk chocolate and dark chocolate baking chunks.
This reminded me back to when I was in kindergarten and we would have cake for peoples birthdays. I am not always a fan of white cake, but these blondies are starting to make me think otherwise.
Confetti Chocolate Chunk Protein Blondies

Description
All natural and healthy confetti chocolate chunk protein blondies. They were moist, dense, and will remind you of eating a piece of birthday cake.
Ingredients
- 1 cup (124g) whole wheat flour
- 1 1/2 scoops (51g) MusclePharm vanilla combat protein powder
- 1/3 cup granulated stevia in the raw, or erythritol
- 3/4 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 1/8 tsp. salt
- 1 large whole egg
- 1/4 cup (56g) coconut oil
- 1/4 cup + 2 tbsp. milk (I used unsweetened almond)
- 1/2 cup (113g) plain greek yogurt
- 3 tbsp. (63g) organic light agave syrup
- 1/3 cup (70g) Amber Lyn Chocolates sugar free chocolate chunks*
- 2 tbsp. (24g) birthday cake sprinkles
Instructions
- Preheat oven to 350F. In a large bowl, mix whole wheat flour, protein powder, stevia, cinnamon, baking powder, and salt.
- In a separate large bowl, add egg, almond milk, greek yogurt, and agave syrup. Microwave coconut oil in a separate small bowl. Let coconut oil cool slightly, then add to wet ingredients. Whisk together all wet ingredients.
- Add 1/ of dry ingredients to wet. Gently fold together. Add remaining dry ingredients and gently mix again until combined. Be careful not to over mix.
- Add chocolate chunks and sprinkles to batter. Fold in chocolate chunks an sprinkles. Pour batter into a 6×8 baking dish sprayed with nonstick spray or greased with coconut oil.
- Bake for about 24 minutes or until a knife comes out clean. Let cool and slice into 8 blondie bars.
Notes
* For the chocolate chunks, I used 1/2 milk chocolate chunks and 1/2 white chocolate chunks.
