Healthy Cottage Cheese Protein Pudding
Most of you have probably seen this one on Greg Doucette YouTube channel. I have made some protein puddings of my own in the past with this method, and then I saw everyone’s reaction to his recipe and figured I had to share my own.
Perfect pudding, No xantham gum needed
It is a bit different because I use my Macro1 Nutrition ONE Vegan Protein instead of the whey / casein blend he uses. I really like using the vegan protein in this one because of how thick it is.
Because the ONE Vegan protein absorbs more liquid, you actually don’t even need to use any xantham / guar gum to thicken it, which I find it to be much better that way. Too much xantham gum, at least for me, makes you gassy and feel a bit bloated so I like to avoid adding it too much to recipes if I can.

A bunch of flavor options
Another great thing about this recipe is all the flavor options you have. You can really add anything you want. In this particular one I used the natural vanilla protein, and then added some peanut flour for the peanut butter flavor and vanilla pudding mix.
There are tons of different sugar free pudding mix powders out there that you could give a try: chocolate, cheesecake, butterscotch, banana, pistachio, etc. I think they would all be amazing. Maybe the next one I make will be a butterscotch or chocolate protein pudding?
Endless ways to eat it
Now that I have made it a few times, I have found that there are so many fun ways to eat it. Want to add it on top of rice cakes? Delicious. Mixed into your oatmeal for a creamy protein packed addition? Go for it.
Maybe even use it as a frosting on your anabolic protein french toast or brownies? No matter how you use it, I am sure it will be delicious. That is what I love about recipes like this.

Ingredients
2 scoops (64g) Macro1 Nutrition ONE Vegan Protein*, code “MACROCHEF” to save 10%
2 cups (440g) fat free cottage cheese
2 cups (480mL) unsweetened almond milk
1 package (35g) sugar free vanilla pudding mix
4 tbsp (32g) peanut flour**
Pinch salt
Instructions
- Add all ingredients to a powerful blender or food processor. Blend until smooth and creamy.
- Place in a tupperware container and store in the fridge for up to a week.
- You can enjoy on its own, with fruit / cereal for breakfast, or even mix into your oatmeal, top pancakes / french toast, etc.
Notes
*ONE Vegan works best for this recipe because it absorbs more liquid and helps make the pudding thick and creamy.
**Optional, but gives a delicious peanut butter flavor. If you leave it out, add and extra half a scoop (16g) of the ONE Vegan protein powder.
