This right here is the ultimate combination of if an apple crumble and a protein cake had a baby. I’m a huge fan of apple pie, and of course cake, so these Apple Crumble Protein Cake Bars did not last long in my house! I just made them and they are all already gone.
I don’t have apple pie or apple crumble often, but when I do I can’t control myself. Well, I’ll be honest, I’m pretty much that way around any dessert. 😅 Anyway, it is a good thing these apple crumble protein cake bars are healthy and have protein, otherwise the amount I ate would have some bad effects on my physique haha!
BSN sent me some of their fall flavors to experiment with
and I’m sure you have seen the PUMPKIN PIE PROTEIN WAFFLES and MINI PROTEIN MICROWAVE PUMPKIN PIES I made with their Syntha-6 pumpkin pie flavor.
Anyway, for this recipe I used their Syntha-6 Apple Pie a la Coldstone flavor. Yes, I will answer the question for you. It actually tastes like apple pie. It was the perfect flavor to use in this recipe.

Description
These apple crumble protein cake bars are dense, delicious, and filled with apple flavor and topped with a warm cinnamon protein crumble and vanilla protein glaze.
Ingredients
Apple Cake Bars
1 cup + 2 tbsp. all purpose flour
3 scoops BSN Syntha-6 Apple Pie a la Coldstone
3 tbsp. Truvia baking blend sweetener*
1/2 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. salt
2 whole eggs
1 cup unsweetened applesauce
3 tbsp. melted light butter (or coconut oil)
1 tsp. vanilla extract
1 granny smith apple, peeled and grated
Cinnamon Crumble
1 cup oats
2 tbsp. light butter, room temp
1 tbsp. Truvia baking blend
1/2 tsp. cinnamon
Cinnamon Vanilla Protein Glaze
2 scoops BSN Syntha-6 vanilla
3 tbsp. almond milk
1 tbsp. ChocZero sugar free maple syrup
1/2 tsp. cinnamon
Instructions
Preheat oven to 350F. Add flour, protein powder, Truvia, cinnamon, baking powder, and salt. Mix. In a separate bowl, add eggs, applesauce, melted butter, vanilla extract, and grated apple. Mix. Add wet ingredients to dry and gently stir until a smooth batter is formed. Spray an 8×8 square cake pan with nonstick spray. Pour batter into pan. Add all crumble ingredients to a bowl. Mix together. I used my hands. The texture should be clumpy. Sprinkle crumble over top of the batter. Bake 350F for 17-20 minutes.
Notes
*Truvia baking blend is a stevia/sugar blend. It can be found in the baking aisle of most groceries. If you don’t have it, you can use 4 tbsp. regular granulated sugar.
