I wasn’t really sure what to call these. They have a dense cakey texture, but they are in the shape of a protein bar. They are also packed with protein. So I guess I’ll just call them protein bars. Sweet potato protein bars to be exact. With a nice drizzle of dark chocolate added on top, they are super delicious.
Last week my mom came home with a cool new pan for baking. Well actually it is a silicone mold. It is made for protein bars and energy bars. It has 12 individual spots so that you don’t have to worry about slicing the bars into even sizes. That is definitely good for me since I always manage to leave a few bars or brownies that are a lot smaller than all the others. Naturally, I eat the bigger ones first! Now that won’t be a problem.
While looking through pinterest the other day, I came across pumpkin blondie protein bars from Power Hungry. They looked awesome and the recipe was easy so I decided to pull out the new protein bar pan and make my own version of them. I had to use sweet potato instead of pumpkin because I ran out! It is a serious emergency when I run out of pumpkin.
Each bar is only 90 calories and has 9 grams of protein. Now that is pretty dang good if you ask me. And for such a small amount of calories, they are really satisfying. However, the taste is so good that it will be hard to only eat one!
For these bars I just stuck with Musclepharm’s vanilla combat protein powder and they turned out amazing. I think next time I might change up the flavor combination a little bit and use chocolate or cinnamon bun combat powder. Or maybe cookies and cream or chocolate peanut butter. Yeah I could probably go on and on. I think just about any flavor would be good.
They are definitely an awesome snack when you are on the go or breakfast if you sleep through your alarm and have to hurry. Not that I have ever done that or anything ;). I think my favorite part to the bars is the chocolate drizzle on top. It never hurts to add a little chocolate!

Description
Healthy sweet potato protein bars topped with a dark chocolate drizzle. These dense and cakey bars have 9 grams of protein and only 90 calories.
Ingredients
- 3 scoops (101g) Musclepharm vanilla combat protein powder
- 1/2 cup (60g) whole wheat flour
- 1/4 cup granulated stevia/erythritol
- 1/2 tbsp. cinnamon
- 1/2 tsp. baking powder
- 1 cup (285g) sweet potato puree (or pumpkin)
- 1/2 cup (113g) plain nonfat Greek yogurt
- 1 large whole egg
- 1 tsp. vanilla extract
- 2 tbsp. dark chocolate chips
Instructions
- Preheat oven to 350F. Mix protein powder, whole wheat flour, stevia, cinnamon, and baking powder in a large bowl. In a separate bowl, mix sweet potato, Greek yogurt, egg, and vanilla extract. Add wet ingredients to dry and stir until well incorporate. Be careful not t over mix.
- Pour batter evenly into a prepared silicone energy/protein bar mold. If you don’t have that, use an 8×8 baking dish. Bake for about 15 minutes or until a knife comes out clean. Cooking time will vary if you use a regular baking dish.
- Once bars are cooked, let completely cool for about 30 minutes on a cooling rack. Melt dark chocolate chips for about 90 seconds in the microwave. Add chocolate to a small plastic bag and cut a small portion off the end. Drizzle chocolate over each protein bar.
