Birthday cake and cookies are both amazing my themselves, so I figured why not combine them? These No-Bake Birthday Cake (I kind of like how that rhymes!) are super easy, delicious, and quick to make!
Important parts to the perfect no-bake cookies
First is coconut flour
Coconut flour absorbs moisture much more than regular flour, which helps give these cookies texture and substance without needing to be baked.
Next, plant/casein protein
It is important to use a plant protein or casein protein because they absorb liquid differently than whey. Plant protein absorbs a lot more liquid. If you try this recipe with whey, the consistency will not be right. I used Birthday Cake plant protein from TRU.
Almond butter / nut butter
The other ingredient which make up the texture of these cookies is almond butter (or any preferred nut butter). They would be great with peanut butter if you are a peanut butter lover like me, cashew butter for a more natural flavor, or even sunflower seed butter for a nut-free option. You could even amp it up with a protein nut butter from Nuts-N-More (link here for 15% off!)
Vegan Option
I know that I have some followers and people who visit the blog who are vegan, so these cookies are (almost) vegan as they are. Depending how strict of a vegan you are, they might be vegan right now, but for 100% vegan, you can substitute the honey for agave syrup or even pure maple syrup.

These no-bake birthday cake protein cookies are super quick, easy, delicious, and ready in an instant to satisfy your cookie craving!
Ingredients
Instructions
- Add coconut flour, protein powder, sweetener, and salt to a bowl. Mix.
- Heat almond butter in microwave for about 15 seconds to soften (makes it easier to mix). Add almond milk, almond butter, and honey. Mix until a thick dough forms. It will take a bit to incorporate together.
- Add sprinkles and gently fold into cookie dough.
- Roll dough into 5 balls, about 3 tbsp. each. Place onto a cookie sheet. Flatten with a fork. Sprinkle with more rainbow sprinkles.
- Let chill for about 15 minutes in the fridge and enjoy!
