I made some healthy chocolate chip protein cookie dough a few days ago. I’m not really sure why I made it, because I didn’t really have any recipe plan for it. At least until today I didn’t. I thought, hmmm… if I already have cookie dough then I might as roll it into balls and dip it in chocolate to make some cookie dough protein truffles.
These are probably some of the healthiest truffles you will find. They are low fat and low sugar. The cookie dough filling for them is made with garbanzo beans. It might sound nasty at first, but trust me, it makes a delicious cookie dough when you make it right. The sugar in each one is kept to just 3 grams thanks to the stevia in the cookie dough and the sugar free Amber Lyn dark chocolate that I dipped them in.
I think these are definitely the best truffles I have made. I’m sure I probably said that in my last truffle recipe, but these are seriously awesome. Who wouldn’t love chocolate chip protein cookie dough covered with decadent dark chocolate.
Despite these looking sinfully delicious, they are also packed with nutrition. Each one has about 4 grams of protein thanks to using both casein and combat protein powder. The beans in the cookie dough give fiber. And of course the chocolate is just there to make me happy because I am slightly addicted.

Description
Delicious and healthy protein cookie dough dipped in dark chocolate to make the perfect healthy protein truffle. Each one has only 75 calories.
Ingredients
- 1 can (250g) garbanzo beans, drained and rinsed*
- 1 scoop (34g) MusclePharm vanilla combat protein powder
- 1 scoop (30g) MusclePharm vanilla casein protein powder
- 1/4 cup pure maple syrup (or sugar free)
- 2 tbsp. vita fiber syrup (or more maple syrup)
- 6 tbsp. granulated stevia or erythritol
- 3 tbsp. (42g) coconut flour
- 3 tbsp. (45g) mini chocolate chips
- 1 cup (180g) dark chocolate chunks (for dipping truffles)**
Instructions
- Add drained and rinsed garbanzo beans, maple syrup, vita fiber syrup and stevia to food processor. Blend until smooth and there are no large chunks of garbanzo beans.
- Next, add protein powder and coconut flour. Blend again until smooth. It should start to make a thick cookie dough consistency. Add mini chocolate chips and pulse a few times until well incorporated.
- Roll cookie dough into about 26 1 inch balls. Put in freezer for 30-45 minutes to chill.
- Melt dark chocolate chunks in the microwave using a microwave safe bowl. Dip each of the cookie dough balls into the dark chocolate and set on parchment paper.
- Put in freezer again for about 20-30 minutes to let chocolate harden. Take out of freezer and enjoy!
Notes
* Weight is of the drained garbanzo beans. Also, make sure to rinse well so that they do not have any salty liquid left on them.
** I used Amber Lyn sugar free dark chocolate chunks to lower the sugar in the recipe. Any dark chocolate will be fine though. You could also use milk or white chocolate to change it up.
