Cosmic Protein Brownies

Description

A healthy, protein-packed take on the classic cosmic brownie. These cosmic protein brownies taste just as good (if not better), have a decadent chocolate flavor, and low in sugar and high in protein! 


Ingredients

Brownies
3/4 cup (90g) whole wheat flour
1 cup (250g) Swerve brown sugar*
3/4 cup (80g) cocoa powder
1/2 tsp salt
2 scoops (68g) Macro1 Nutrition ONE Protein, chocolate brownie (“MACROCHEF” to save 15%!)
3/4 cup (200 ml) water or almond milk
3 whole eggs
1/2 cup (112g) light butter**
1/2 cup dark chocolate chips, optional
 
Frosting
1 scoop (34g) Macro1 Nutrition ONE Protein, chocolate brownie (“MACROCHEF” to save 15%!)
1/4 cup unsweetened cocoa powder
1/4 cup peanut flour 
1/4 cup Swerve confectioner’s sweetener 
1/4 cup unsweetened almond milk (may need more or less depending on your protein powder)
1/2 tsp. vanilla extract
1/4 cup sprinkles (for topping) 

Instructions

  1. Preheat oven to 350F.
  2. Mix all dry brownie ingredients in a large bowl. Mix wet ingredients in a separate bowl. Combine wet and dry ingredients and gently stir until a smooth batter is formed. Fold in chocolate chips.
  3. Pour batter into a greased 8×8 glass baking dish. Bake at 350F for about 20-25 minutes. The center should still be slightly under-done to keep the rest of the brownies from drying out.
  4. Once baked, let completely cool. Mix all chocolate frosting ingredients in a large bowl. Spread over cooled brownies. Sprinkle the top with sprinkles. Cut into 16 brownies and enjoy!

 


Notes

*Swerve brown sugar is a sugar free brown sugar alternative. It can be found in the baking aisle of most grocery stores or here on Amazon. If you don’t have it, you can just use regular brown sugar, but calories and sugar will be much higher. 

**Light butter has only 4g of fat per tbsp. compared to 11-12g of regular butter. This is found where all the regular butter is found in the grocery. Regular butter or coconut oil can be substituted, but will raise fat and calories.
