Ever since I went to Belgium last summer I have been pretty obsessed with waffles. I donāt know how to make a legit Belgian waffle with the yeast dough and pear sugar, so I will just have to make do with these Blueberry Almond Protein Waffles.
I have started using some protein from a company called Xtend. They make some really great products including BCAAās and this Xtend Pro protein powder. For this recipe, I used their Xtend Pro Vanilla Ice Cream for this one. I can see why they call the flavor vanilla ice cream, because it really tasted like vanilla ice cream!
For these waffles, I did one of my typical protein waffle recipes calling for protein powder, flour, egg, some milk and Greek yogurt, etc. I also blended up some almond butter into the batter. Itās optional, but quite tasty! Then, I added some blueberries to the batter because you canāt have blueberry waffles without blueberries right?
The recipe made 5 pretty large waffles. The nutrition calculation is for 1 waffle. If you want, you can eat a big stack of these waffles, or you can freeze them individually to have as a quick snack or on the go breakfast later. No matter how you eat them, you are sure to enjoy them!

Blueberry Almond Butter Protein Waffles

Description
These are fluffy, protein packed vanilla protein waffles filled with fresh blueberries. They have 16 grams of protein per waffle!
Ingredients
Waffles
- 1/2 cup oats (quick or old fashioned)
- 2 scoops Xtend vanilla protein powder
- 2 large eggs
- 1/3 cup vanilla Greek yogurt
- 2 tbsp. milk (almond, soy, dairy, etc)
- 1 tbsp. almond butter
- 1/2 tsp. baking powder
- pinch of salt
- 1/4 tsp. cinnamon (optional)
- 1/2 cup blueberries (fresh or frozen)
Toppings
- 1/4 cup Greek yogurt
- 1/2 scoop Xtend vanilla protein powder
- 1 tbsp. almond butter (melted)
- 2 tbsp. fresh blueberries
- 1/2 tbsp. slivered almonds
Instructions
- Preheat waffle iron to medium heat. Add oats, all waffle ingredients to a blender except for blueberries. Blend until a smooth batter forms. Be careful not to blend too much. Fold in blueberries.
- Spray waffle iron with nonstick spray. Pour batter into waffle iron. Should make 5 waffles total. Cook until golden brown, or for about 4-5 minutes.
- For topping, mix Greek yogurt and vanilla protein powder to make a vanilla cream frosting on top. Drizzle with melted almond butter, blueberries, and slivered almonds.
Notes
Waffles can be frozen for later so you have a quick, protein packed breakfast on the go!
