Description

Delicious, fluffy pumpkin spice protein cake topped with a creamy pumpkin peanut butter protein frosting. This cake is the perfect recipe for amazing fall flavor!

Ingredients

Pumpkin Cake

1 package Lil Buff Pump-It-Up Protein cake mix 

1/2 cup canned pumpkin puree

1 egg white

2 tbsp. cashew milk

Pumpkin PB Sauce

1/3 scoop vanilla whey protein powder

2 tbsp. canned pumpkin puree

1 tbsp. natural peanut butter, melted

2 tbsp. cashew milk

sweetener to taste (optional)


Instructions

  1. Add Lil Buff pumpkin protein mug cake mix, canned pumpkin , egg white, and cashew milk to a bowl. Mix until a smooth batter forms. 
  2. Spray a mug with nonstick spray. Pour batter into mug. Microwave for 2:30. May need a little more/less time depending on microwave. I checked at 1:30, then microwaved for another 1 minute. 
  3. Next, mix pumpkin peanut butter protein sauce. Add all ingredients to a small bowl and mix until a smooth mixture is formed. 
  4. Top cake with pumpkin peanut butter sauce, and sprinkles from the mug cake mix. Enjoy!
