Ok, so I posted this one on Instagram about a week ago, but figured I’d post the recipe on here is well since it is easier to see. Whenever I comment the recipe on Instagram, it can get lost pretty easily when more and more people comment. Check out below for the Reese’s Cup Protein Brownie Cake!
I know, it seems a little odd that I used brownie mix in this recipe. Of course, you can use flour, cocoa powder, sugar and baking powder to substitute, but just using 1/2 a package of brownie mix is much quicker and easier.
The frosting, which you can see above is a combination of peanut flour, Protein Cookie Butter powder (“MACROCHEF” code for 10% off!), and some vanilla Greek yogurt. It has nearly no fat, and is low sugar and packed with protein.
And, as you can see in the picture below, I made use of a lot of Halloween Reese’s cups with this one. Some Reese’s pumpkins were tossed in there for fun!

Description
Dense, rich, chocolate brownie protein cake filled with Reese’s PB cups and topped with a creamy peanut butter cookie protein frosting!

- Preheat oven to 350F. Add all brownie ingredients except for the chopped Reese’s cups to a large bowl. Mix together until a smooth batter forms. Fold in Reese’s cups.
- Spray a round 9-inch, glass baking dish with non-stick spray. Pour batter into dish.
- Bake at 350F for about 20-30 minutes depending on size of baking dish and oven. I took mine out after about 25 minutes when the center was still slightly under-done to keep them more moist.
- Let cake completely cool before spreading frosting. Mix cookie butter powder, peanut flour, and Greek yogurt. If it is too thick, add a bit more Greek yogurt. If it’s too runny, add more cookie butter powder or peanut flour.
- Spread frosting on cooled cake and cut into 12 slices. Enjoy!
