I’m not going to lie, I’m normally not a huge caramel fan. I would take chocolate or peanut butter over caramel any day. But, this no-bake salted caramel cheesecake may make me change my mind about that. I’m serious. I could have eaten myself into sickness with this recipe. It is that GOOD!!!
I used to make protein cheesecakes all the time, but I hadn’t made one in a while, so figured I would make one again. The decision to go with a no-bake cheesecake was due to simplicity, and I was pretty impatient and hungry. Oh, and my oven wasn’t working at the time so I really had no option.
To give this recipe the delicious salted caramel flavor it has, I used my new Xtend Pro salted caramel protein powder. Honestly, before I tried it, I wasn’t sure how good a salted caramel protein powder would taste. After trying it and making this recipe, I can confirm that it is absolutely amazing!
Graham crack crust has to be the best pie/cheesecake crust in my opinion. I have sometimes bought a pre-made Graham cracker crust, but this time I decided to make my own. All you need is some graham crackers, coconut oil, and milk.
For the no-bake cheesecakes, you have to have something that can help it set up and maintain its integrity. I used some cool whip and pudding mix and it worked like a charm. The pudding mix I used was sugar free cheesecake. It gives such a delicious cheesecake taste without adding all the fat that cream cheese would, and of course being sugar free helps reduce the calorie content.
After it was all said and done, I had to drizzle some sugar free salted caramel over top. You can’t have a salted caramel protein cheesecake without some extra salted caramel. I also added a few chopped walnuts for added texture and deliciousness!

Description
No-bake salted caramel protein cheesecake bars make the perfect decadent and creamy cheesecake recipe packed with protein and amazing salted caramel flavor that will not disappoint.
Ingredients
Crust
- 8 sheets graham crackers
- 3 tbsp. Coconut oil (melted)
- 2 tbsp. Milk (any is fine)
Cheesecake
- 1 brick reduced fat cream cheese (room temperature)
- 1 cup vanilla Greek yogurt*
- 1 tub (8oz) whipped topping ((cool whip))
- 2 scoops Xtend Pro salted caramel shake protein powder
- 1 package sugar free cheesecake pudding mix
- 1/2 tsp. vanilla extract (optional)
- pinch of salt (optional, but enhances flavor in my opinion!)
Instructions
- Add graham crackers to a food processor or blender. Pulse until mostly crushed, but not a powder. Pour crushed graham cracker into a bowl. Add melted coconut oil and milk. Mix until a crumbly mixture is formed.
- Line a 6×8 baking dish with foil. Spray with nonstick spray. Press crust into the bottom of the pan gently so that it evenly covers the bottom.
- Next, add cream cheese, vanilla Greek yogurt, protein powder, pudding mix, vanilla extract and salt to a large bowl. Mix well until all ingredients are combined and a smooth cheesecake batter forms.
- Add cool whip to cheesecake mixture. Gently fold together, being careful not to over mix. This will allow the cheesecake to be light, fluffy and set up well.
- Pour cheesecake batter over top of the crust and spread so it is even. Place in the fridge for 4-6 hours, or overnight, to let completely set.
- Slice into 8-12 cheesecake bars and enjoy.

*I used Triple Zero Vanilla Greek which uses stevia to sweeten it for less sugar, and also has added fiber.
