Oatmeal Chocolate Chip Cookies

Description

Healthy oatmeal chocolate chip cookies. They are low sugar, have much more protein than a typical cookie, and the perfect snack when you are craving something sweet.

Ingredients

  • 1/4 cup (31g) whole wheat flour
  • 1 scoop (34g) Musclepharm vanilla combat protein powder
  • 1 cup (80g) old fashioned oats, not instant
  • 1/4 cup + 2 tbsp. granulated stevia or erythritol
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/4 cup (64g) natural creamy peanut butter
  • 3 tbsp. (42g) coconut oil
  • 2 large whole eggs
  • 1 tsp. vanilla extract
  • 1/4 cup (56g) dark chocolate morsels, divided

Instructions

  1. Preheat oven to 325F. Add flour, protein powder, old fashioned oats, stevia, cinnamon, and baking powder to a large bowl.
  2. In a smaller bowl, microwave peanut butter and coconut oil for 20-30 seconds to melt coconut oil. Mix well. Once peanut butter and coconut oil has slightly cooled, add eggs and vanilla extract. Mix again.
  3. Pour wet ingredients dry ingredients. Mix well. It will be a thick and sticky batter. Add 3/4 (3 tbsp.) of the chocolate chips and fold into batter. Spray a cookie sheet with cooking spray. Scoop dough on to cookie sheet 2 tbsp. at a time to make 11 cookies.
  4. Gently press down with a fork to flatten a little. Add a chocolate chip to the top of each cookie. Bake for 3-4 minutes. Be careful they can dry out very quickly so do not over bake.

Notes

* If you don’t want to use protein powder, you can just use more flour in place of it.
