Description

Protein packed chocolate brownies cupcakes topped with healthy peanut butter frosting and chocolate peanut butter cup protein bar. The cupcakes taste just like brownies!

Ingredients

Chocolate Cupcakes

  • 3/4 cup (90g) whole wheat flour
  • 1 1/2 scoops (52g) Musclepharm chocolate milk combat protein powder
  • 1/4 cup (20g) unsweetened cocoa powder
  • 1/4 cup + 1 tbsp. granulated stevia or erythritol
  • 1 tsp. baking powder
  • 1 large whole egg
  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 1/2 cup (122g) canned pumpkin puree
  • 1/4 cup + 2 tbsp. unsweetened milk (I used almond)
  • 3 tbsp. (36g) coconut sugar (or brown sugar)
  • 1 tsp. vanilla extract
  • 2 tbsp. (30g) dark chocolate chips

Peanut Butter Frosting

  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 3 tbsp. (48g) Nuts N More protein peanut butter
  • 2 tbsp. (32g) natural creamy peanut butter
  • 2 tbsp. (12g) peanut flour
  • 1/4 cup granulated stevia or erythritol

Instructions

  1. Preheat oven to 350F. Mix whole wheat flour, protein powder, cocoa, stevia, and baking powder in a large bowl. Add egg, Greek yogurt, pumpkin, almond milk, coconut sugar and vanilla extract to a separate bowl. Mix wet ingredients until smooth.
  2. Add wet ingredients to dry and gently mix together until combined. Fold in chocolate chips.
  3. Spray 10 silicone cupcake liners with cooking spray. Spoon batter evenly into each cupcake liner. Each should be about 3/4 full. Put cupcakes into a baking dish or on a cookie sheet and put in the oven. Bake for about 20 minutes. I left mine a little underdone so they would be moist and brownie-like.
  4. One cupcakes are done, let them completely cool before adding frosting. Start making frosting while cupcakes cool. Mix Greek yogurt, peanut butter, peanut flour, and stevia in a medium bowl. Add frosting to a piping bag and frost each cupcake. Chop up peanut butter cup protein bar into small pieces and top each cupcake with a piece. Enjoy!
