Description

Moist and dense deep dish chocolate chip cookie pie. This gooey healthier version has almost 1/3 of the calories of the normal recipe.

Ingredients

  • 2 cans garbanzo beans (490g after being drained)
  • 3/4 cup (60g) quick oats
  • 1/2 cup (90g) coconut sugar (or brown sugar)
  • 1/4 cup (48g) stevia brown sugar blend (or another 1/4 cup brown sugar)
  • 2 scoops MusclePharm vanilla combat protein powder
  • 1/2 cup (113g) natural applesauce
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3 tbsp. (42g) coconut oil, melted
  • 1 1/2 tsp. vanilla extract
  • 6 tbsp. (90g) dark chocolate chips (more if desired)

Instructions

  1. Preheat oven to 350F. Rinse garbanzo beans very well. Add all ingredients except for chocolate chips to food processor. Blend well until smooth.
  2. Add chocolate chips and pulse a few times to incorporate. Spray a 9 inch cheesecake pan or round cake pan with nonstick spray. Pour batter into pan.
  3. Bake for 30 minutes. The top will be slightly gooey. Once cooked, let cool for about an hour to an hour and a half then cut into 8 slices.
