Blueberry Banana Bread Protein Donuts

Description

These blueberry banana bread donuts are the perfect combination of banana bread and a delicious blueberry donut, but healthy and protein-packed!

Ingredients

Donuts

  • 1/2 cup flour
  • 2 scoops Syntha-6 Vanilla Ice Cream protein powder
  • 1/2 tsp. baking powder
  • cinnamon to taste
  • 1/4 tsp. salt
  • 1 large ripe banana (mashed)
  • 1 whole egg
  • 1/4 cup nonfat plain Greek yogurt
  • 2 tbsp. olive oil
  • 1/4 tsp. vanilla extract
  • 2 tbsp. Truvia baking blend*
  • 3/4 cup frozen blueberries

Icing

  • 1 1/2 scoops Syntha-6 Vanilla Ice Cream protein powder
  • 3 tbsp. milk
  • 1 tbsp. Greek yogurt
  • sweetener to taste (optional)

Instructions

  1. Preheat oven to 350F.
  2. Add flour, protein powder, cinnamon, baking powder and salt to a large bowl. Mix.
  3. In a separate bowl add mashed banana, egg, Greek yogurt, olive oil, vanilla extract and Truvia sweetener. Mix.
  4. Combine wet and dry ingredients. Gently stir together until a smooth batter forms. Fold in blueberries.
  5. Spray 2, 6-spot donut pans with nonstick spray. Pour batter into a gallon ziplock bag. Cut the tip off and use the bag to pipe the batter into the prepared donut pans. I made a total of 9 donuts.
  6. Bake for 12-14 minutes or until a knife comes out clean. Once done baking, take out of oven and let completely cool.
  7. Mix all icing ingredients in a small bowl. Dip each of the cooled donuts in icing. Enjoy!

Notes

*Truvia baking blend is a stevia/sugar mixture. It has 1/2 the sugar of regular granulated sugar, but it is sweeter so you don’t have to use as much. It can be found in the baking aisle of most grocery stores. If you can’t find it, you can use 1/4 cup regular granulated sugar.

**Fresh works as well too, I just only had frozen blueberries on hand.
