Low Carb Protein Fluff

Description

This low carb protein fluff is the perfect recipe for when you are craving something sweet, with less than 90 calories per serving and 12 grams of protein, it is sure to satisfy your sweet tooth! 


Ingredients

300g frozen cauliflower 
200g frozen mixed berries (any frozen fruit will work here)
50g whey protein powder (I used a strawberry protein in this one)
100g peanut flour
185g plain, nonfat Greek yogurt 
180 ml almond milk
50g Swerve confectioners sweetener 
1 tbsp. xantham gum

Instructions

Add all ingredients except for xantham gum to a food processor or powerful blender. Process until smooth and completely combined. 

Add xantham gum. Process again. It will start to get really thick. This should take a minute or two. Once completely mixed and thickened. Remove from food processor and place in a large bowl. 

Store in fridge for up to 7 days and eat when ready. I like to add some extra toppings to mine, such as extra berries and peanut butter.
