Birthday cake protein truffles! Yep, birthday cake in the form of a truffle. It’s basically like portable birthday cake right? I love truffles, and these definitely confirm that love.
The base of these truffles largely comes from peanut flour. It is a great base for truffles because of the tasty peanut butter flavor, texture, and low calories. I also added a bit of coconut flour to help absorb moisture and give it a thick cooke-dough like texture.
For the protein powder, I used casein. Casein works well because it absorbs moisture. I wouldn’t recommend using whey, as whey will make it a really stick batter and won’t give the same consistency as casein. In this one, I used Ascent vanilla casein.
One of the best parts about this recipes is that these birthday cake protein truffles can be made from start to finish in about 10-15 minutes. Just blend all the ingredients up in a food processor. Roll into truffles, and enjoy! No baking necessary!

Description
Delicious birthday cake protein truffles filled with sprinkles to give you the satisfaction of eating birthday cake, but healthy and with added protein.
Ingredients
- 2 scoops Ascent Native Fuel vanilla casein protein*
- 3/4 cup peanut flour
- 3 tbsp. coconut flour
- 6 tbsp. milk (any milk is fine, or even water)
- 2 tbsp. coconut oil (melted (or grass fed butter))
- 3 tbsp. honey
- 1/2 tsp. vanilla extract
- pinch of salt
- 1/4 cup birthday cake sprinkles
Instructions
- Add all ingredients except for sprinkles to a food processor. If you don’t have a food processor, you can mix by had but it takes some work!
- Process until a thick, cookie dough consistency batter forms. Next, add birthday cake sprinkles. Pulse until the sprinkles are mixed in. It may be too thick to mix the sprinkles in while in the food processor, so you can also knead them in by hand.
- Roll dough into 12 truffles. Enjoy!
Notes
*Casein protein must be used for this recipe. Whey will end up being sticky and will not result in the correct texture.
