Description

Moist banana protein baked oatmeal bars filled with delicious chocolate chunks. These healthy bars are perfect for a quick breakfast.

Ingredients

  • 2 cups (80g) old fashioned oats
  • 1 and 1/3 scoops (45g) MusclePharm vanilla combat protein powder
  • 1/4 cup granulated stevia or erythritol
  • 1 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 2 large (230g) ripe bananas
  • 1 large whole egg
  • 1/2 cup plain nonfat Greek yogurt
  • 2 tbsp. unsweetened almond milk
  • 1/2 tsp. vanilla extract
  • 1/3 cup (85g) Amber Lyn sugar free dark chocolate baking chunks, chopped

Instructions

  1. Preheat oven to 375F. In a large bowl, mix oats, protein powder, stevia, cinnamon, and baking powder. In a separate bowl, add peeled ripe bananas and microwave for about 30 seconds to soften. Mash bananas with a fork. Add Greek yogurt, egg, almond milk, and vanilla extract. Mix until smooth. Add wet ingredients to dry and gently mix together until combined. Fold in chopped dark chocolate chunks.
  2. Spray a 6×8 baking dish with nonstick spray or line with parchment paper. Pour batter into baking dish and bake for 15-20 minutes or until a knife comes out clean. Mine were done at about 18 minutes. Once done cooking, take out of oven and let completely cool for about 45 minutes. Slice into 8 bars and enjoy.
