Healthy protein baked oatmeal cups filled with juicy mixed berries and decadent dark chocolate chips.

Ingredients

  • 2 cups (160g) old fashioned oats
  • 2 scoops (67g) MusclePharm vanilla combat protein powder
  • 1/4 cup + 2 tbsp. granulated stevia or erythritol
  • 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 1/4 cup + 2 tbsp. (90g) canned pumpkin
  • 1/2 cup milk (any milk is fine)
  • 1 whole egg
  • 3/4 cup (105g) frozen mixed berries
  • 1/4 cup (42g) dark chocolate chips + more for topping

Instructions

  1. Preheat oven to 400F. Mix oats, protein powder, stevia, cinnamon, and baking powder in a large bowl. In a separate bowl, mix egg, yogurt, pumpkin, and milk. Combine wet and dry ingredients. Gently stir together until smooth.
  2. Add chocolate chips and frozen mixed berries. Fold into batter. Spray a jumbo muffin tin or 5 ramekins with nonstick spray. Pour batter evenly into 5 spots in the jumbo muffin tin or ramekins. Bake for 18-20 minutes or until a knife comes out clean.
  3. Once cooled, melt some extra dark chocolate chips and drizzle over the top. Enjoy!
