Oatmeal Cups

  • 1 and 1/2 cups (120g) old fashioned oats
  • 1 scoop (34g) Musclepharm vanilla combat protein powder
  • 3 tbsp. granulated stevia
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 whole egg*
  • 1/2 cup unsweetened almond milk
  • 2 tbsp. sugar free maple syrup
  • 1 tsp. vanilla extract
  • 1 large (150g) ripe banana
  • 1 cup (140g) fresh or frozen blueberries

Instructions

  1. Preheat oven to 375F. Add oats, protein powder, stevia, cinnamon and baking powder to a bowl. Mix until combined. Peel banana and slice in half. Mash half of banana in a separate bowl and leave the other half to the side. To the bowl with mashed banana, add egg, unsweetened almond milk, maple syrup, and vanilla extract. Mix well. Add wet ingredients to dry and stir until combined. Add blueberries and fold in until evenly distributed. Spray a muffin pan with cooking spray. Pour batter evenly into 8 spots in muffin pan. Slice remaining banana into 8 slices. Add a slice to the top of each oatmeal mixture. Bake for about 15-20 minutes or until a knife comes out clean. Mine took closer to 20 minutes to be cooked.

Notes

*Egg can be substituted for a flax egg and protein substituted for flour to make this recipe vegan.
