Ingredients

Pancakes

  • 3/4 cup (83g) buttermilk Pumped Up Protein Pancakes mix
  • 2/3 cup water*
  • 1/3 cup (50g) blueberries
  • 1/2 tbsp. granulated stevia (optional)

Blueberry Chia Jam

  • 1/3 cup (50g) frozen blueberries
  • 1 tbsp. sugar free maple syrup
  • 1/2 tbsp. (7g) chia seeds
  • Stevia to taste

Instructions

  1. Preheat pan or griddle to medium/high heat.
  2. Mix pumped up pancake mix with water. Add stevia and mix. Fold in blueberries.
  3. Spoon batter on to griddle to make 4 even sized pancakes. Cook for about 3 minutes per side.
  4. For chia jam, add blueberries, sugar free maple syrup and optional stevia to a bowl. Heat for 30-45 seconds until blueberries are warm.
  5. Mash a little bit with a fork, then add chia seeds and mix. Let sit for 5-10 minutes in the fridge to let chia seeds absorb liquid and thicken.
  6. Top pancakes with blueberry chia jam.

Notes

* May need more or less water depending on desired thickness.
