Man, this is the first new pancake recipe I have made in a while. It certainly reminded me why I love protein pancakes so much. I mean seriously, how could you ever go wrong with protein pancakes? I’m not going to lie, these cookie butter protein pancakes weren’t for breakfast, I actually ate them for dinner. Is there anything better than breakfast for dinner?
Cookie Butter Protein
Anyway, I used some of a new protein called Xtend Pro cookie butter protein powder. I wasn’t 100% sure how legit it would taste, but wow, they absolutely nailed it. It really tastes like cookie butter. If you have ever had the Trader Joe’s cookie butter, Biscoff spread, or Speculoos spread if you are in Europe, then you know how amazing it is.
Speaking of cookie butter flavored things, when I was in Belgium racing last summer, I ate ridiculous amounts of Speculoos. It is funny how groceries there have only one kind of peanut butter, and almost hundreds of types of other spreads like Nutella and Speculoos. I was also recently on a Delta flight and they gave some Biscoff cookies to snack on, which I certainly wasn’t sad about.
Back to the pancakes, however. I used the cookie butter protein in the pancakes, of course. Then, after cooking them, I topped them with more cookie butter. I am a firm believer you can never have too many toppings on your pancakes. To make the cookie butter easier to drizzle, I heated up in the microwave for a little bit.
Lastly, I topped the pancakes with a few crushed vanilla creme cookies. You can top them with pretty much any cookies you like. Biscoff cookies, Oreos, chocolate chip cookies… pretty much anything your heart desires. After all, they are cookie butter pancakes so you just gotta have cookies on them! And, you don’t even have to feel bad about how delicious these babies are since they are healthy and packed with protein!
Cookie Butter Protein Pancakes

Ingredients
Pancakes
- 1/3 cup oats (ground into flour)
- 1 scoop Xtend Pro cookie butter protein powder
- 1/2 tsp. Baking powder
- Pinch salt
- 1/4 tsp cinnamon
- 1 whole egg
- 1/3 cup vanilla Greek yogurt
- 2–3 tbsp. milk (almond, cashew, dairy, or soy work)
Toppings
- 1-2 tbsp. cookie butter (heat in microwave so it is easier to drizzle over the top)
- 1 vanilla cookie or biscoff cookie (crushed)
Instructions
- Preheat pan/griddle to medium heat. Add oat flour, protein powder, baking powder, cinnamon and salt to a bowl. Mix.
- Add egg, Greek yogurt, and milk. Gently stir together until a smooth batter is formed.
- Spoon batter onto pan to make 4-5 medium sized pancakes. Cook for a couple minutes per side.
- Heat cookie butter in microwave to make it more runny. Drizzle cookie butter over top of pancakes and top with crushed biscoff/vanilla creme cookies if desired. Enjoy!
Notes
*This is roughly 1/4 cup oat flour. You could also use whole wheat flour/white flour.
