Now, I’m not going to lie. If I could eat pancakes for every meal, I probably would. Well, maybe not every meal, but a stack of protein pancakes every day wouldn’t be too bad! Especially if they are as good as these mint chocolate chip protein pancakes.
I don’t know how long it has been since I’ve had a good mint chocolate chip protein powder. Often times, they can taste overbearing. However, BSN absolutely nailed the flavor profile in the new Syntha-6® Mint Mint Chocolate Chocolate Chip flavor they did in collab with Cold Stone Creamery™.
You may be wondering why they are green. I mean it makes sense because they are mint flavored. But the secret in this recipe is adding a little bit of spinach when blending up the pancake batter. You don’t taste it one bit, it adds extra nutrients, and of course an awesome color.
Anyway, these pancakes came out super moist and fluffy with the protein powder blend in the Syntha-6 protein. No one likes dry pancakes!
I topped the pancakes with a chocolate cream which was basically just some Greek yogurt mixed with a little bit of melted dark chocolate. Simple and delicious. Then, because you know I can’t ever get enough chocolate, I drizzled some extra dark chocolate over top for a bit of indulgence! I hope you guys enjoy these as much as I did.

Description
These moist, fluffy mint chocolate chip protein pancakes are the perfect combination of protein packed and sinfully delicious for your breakfast, dessert, or pre-workout meal.
Ingredients
- Pancakes
- 1/2 cup whole wheat flour
- 1 scoop BSN Coldstone Mint Chocolate Chip protein powder
- 1 tsp. Baking powder
- 1/4 cup vanilla Greek yogurt
- 1/4 cup milk of choice
- 1 whole egg
- Handful spinach*
- Toppings
- 1/4 cup vanilla Greek yogurt
- 1 tbsp. dark chocolate chips, melted
Instructions
- Preheat a pan or griddle to medium/high heat.
- Add milk, yogurt, egg, and spinach to a small blender. Blend until smooth and there are no chunks of spinach. Add protein powder, flour, and baking powder to blender. Blend again until a smooth batter forms, but be careful not to blend to much and over-mix.
- Spray pan/griddle with nonstick spray. Spoon batter onto pan to evenly make 5 pancakes about 3-4 inches in diameter. Cook for a few minutes, or until bubbles start to form. Flip, and cook another couple minutes until done.
- Heat chocolate chips in microwave for about 30 seconds to melt. Add 1/2 of the melted chocolate to the vanilla Greek yogurt. Top pancakes with chocolate yogurt mixture.
- Drizzle remaining melted chocolate over top of pancakes. Top with a few extra chocolate chips if desired. Enjoy!
Notes
*Spinach is optional. You don’t taste it one bit and it gives the pancakes a really nice green color, and some extra nutrients!
