  • 1/2 cup (60g) whole wheat flour
  • 1/4 cup granulated stevia/erythritol
  • 1/2 tbsp. cinnamon
  • 1/2 tsp. baking powder
  • 1 cup (285g) sweet potato puree (or pumpkin)
  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 1 large whole egg
  • 1 tsp. vanilla extract
  • 2 tbsp. dark chocolate chips

Instructions

  1. Preheat oven to 350F. Mix protein powder, whole wheat flour, stevia, cinnamon, and baking powder in a large bowl. In a separate bowl, mix sweet potato, Greek yogurt, egg, and vanilla extract. Add wet ingredients to dry and stir until well incorporate. Be careful not t over mix.
  2. Pour batter evenly into a prepared silicone energy/protein bar mold. If you don’t have that, use an 8×8 baking dish. Bake for about 15 minutes or until a knife comes out clean. Cooking time will vary if you use a regular baking dish.
  3. Once bars are cooked, let completely cool for about 30 minutes on a cooling rack. Melt dark chocolate chips for about 90 seconds in the microwave. Add chocolate to a small plastic bag and cut a small portion off the end. Drizzle chocolate over each protein bar.
