Banana Nutella Protein Waffle Sandwich

Description

Fluffy vanilla protein waffles filled with creamy chocolate hazelnut butter and sliced banana then grilled to melty perfection to make the perfect breakfast sandwich.

Ingredients

  • 6 tbsp. (45g) oat flour*
  • 2/3 scoop (22g) MusclePharm vanilla combat protein powder
  • 1/4 tsp. baking powder
  • stevia/sweetener to taste
  • 1 whole egg
  • 1/4 cup (60g) canned pumpkin (or Greek yogurt, mashed banana, applesauce)
  • 3 tbsp. milk (any milk is fine)
  • 2 tbsp. (32g) chocolate hazelnut butter
  • 1/2 small banana

Instructions

  1. Preheat waffle iron to medium heat. Mix flour, protein powder, baking powder and sweetener in a bowl. In a separate bowl mix egg, milk, and canned pumpkin. Combine wet and dry ingredients. Gently fold together until a smooth batter forms.
  2. Spray waffle iron with nonstick spray. Pour batter into waffle iron to make 2 waffles. (I used a square Belgian waffle maker). Cook for about 3-4 minutes or until waffles are golden brown.
  3. Spread chocolate hazelnut butter onto one waffle and layer the other one with sliced banana. Make a sandwich out of the waffle. If desired, grill in a pan on each side to make the sandwich warm and gooey. Enjoy!

Notes

* Blend a little over 1/2 cup of oats to make oat flour. Or you can use whole wheat flour.
