Ingredients

Maple Pumpkin Waffles

  • 1 cup (120g) whole wheat flour
  • 1 scoop (33g) Musclepharm cinnamon combat protein powder
  • 1 tbsp. stevia
  • 1/4 tsp. cinnamon
  • 1/4 tsp. pumpkin pie spice
  • 1/2 tsp. baking powder
  • 1/2 cup (120g) canned pumpkin
  • 1/2 cup + 2 tbsp. unsweetened almond milk
  • 1 whole egg
  • 1/2 tsp. maple extract

Chocolate Maple Sauce

  • 1 and 1/2 tbsp. (8g) cocoa powder
  • 3 tbsp. sugar free maple syrup

Pumpkin Butter

  • 2 tbsp. (30g) pumpkin
  • 1 tbsp. (16g) natural peanut butter*
  • Stevia to taste

Instructions

  1. Preheat waffle iron to medium/high heat. Mix flour, protein powder, stevia, baking powder, cinnamon, and pumpkin pie spice in a bowl. Mix pumpkin, almond milk, egg, and maple extract in a separate bowl.. Combine wet and dry ingredients. Spray waffle iron with cooking spray. Pour batter into waffle iron. Cook for about 4-5 minutes. In a small bowl, mix cocoa powder, and sugar free maple syrup to make chocolate maple sauce. In another bowl, mix peanut butter, pumpkin and stevia to make pumpkin butter. Top with chocolate maple sauce and pumpkin butter. Makes 2 servings. 2 waffles per serving.

Notes

* Can sub any nut butter for peanut butter.
