Healthy peanut butter banana bread protein waffles filled with dark chocolate chips and topped with sliced banana and peanut butter cream.

Ingredients

Waffles

  • 3/4 cup (90g) whole wheat flour
  • 1 scoop (34g) MusclePharm vanilla combat protein powder
  • 2 tbsp. (12g) peanut flour
  • 1/4 cup granulated stevia or erythritol
  • 1/2 tsp. cinnamon
  • 3/4 tsp. baking powder
  • 1/4 cup + 1 tbsp. milk (any milk is fine)
  • 1 whole egg
  • 1/3 cup plain nonfat Greek yogurt
  • 1/2 (70g) large ripe banana
  • 1/2 tsp. vanilla extract (optional)
  • 2 tbsp. (28g) chocolate chips

Peanut Butter Cream

  • 1/3 cup (75g) plain nonfat Greek yogurt
  • 2 tbsp (32g) natural peanut butter
  • 2 tbsp. pure maple syrup (or sugar free)

Instructions

  1. Preheat Belgian waffle maker to medium heat. Mix flour, protein powder, peanut flour, stevia, cinnamon and baking powder.
  2. In a separate bowl, mash banana until smooth. Add egg, Greek yogurt, milk, and vanilla exract. Mix well.
  3. Combine wet and dry ingredients. Gently mix together until combined. Add chocolate chips and fold into the batter. Spray waffle iron with nonstick spray. Pour batter evenly into waffle iron to make 4 Belgian waffles. Cook for about 4 minutes or until golden brown.
  4. Combine all peanut butter cream ingredients and mix until smooth. Layer waffles with sliced banana. Top with peanut butter cream and more chocolate chips.
