Berry Chocolate Chunk Protein Bread

Description

Healthy and delicious protein bread filled with juicy blueberries, raspberries, blackberries and decadent milk chocolate chunks then drizzled with some more milk chocolate.

Ingredients

  • 1 1/2 cups (180g) whole wheat flour
  • 2 scoops (66g) MusclePharm vanilla combat protein powder
  • 1/4 cup + 2 tbsp. granulated stevia or erythritol
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup (113g) plain nonfat Greek yogurt
  • 1/2 cup (113g) natural applesauce
  • 1 large whole egg
  • 1/4 cup oil (canola or meted coconut oil)
  • 1/4 cup pure maple syrup*
  • 1/4 cup milk (any milk is fine)
  • 3/4 cup (105g) frozen mixed berries
  • 1/2 cup (85g) milk chocolate chunks + more for topping

Instructions

  1. Preheat oven to 350F. Add flour, protein powder, stevia, baking powder, baking soda, and salt to a large bowl. Mix.
  2. In a separate bowl, add Greek yogurt, applesauce, oil, egg, milk, and maple syrup to a separate bowl. Mix well.
  3. Gently mix wet and dry ingredients together. Be careful not to over mix. Add frozen berries and chocolate chunks. Fold in to the batter.
  4. Spray a 9×5 loaf pan with cooking spray. Pour batter into pan. Bake for Bake for 30-35 minutes. Put foil over the top. Bake for another 5 minutes or until a knife comes out clean.
  5. Let loaf completely cool. Melt more chocolate chunks and drizzle over top of the loaf. Cut into 12-13 slices and enjoy.

Notes

* Instead of pure maple syrup you could use honey or agave. Sugar free maple syrup might work also but I have not tried it.
